Easy Vegan One Pot Asian Pasta

Welcome to 2018! I hope everyone had a wonderful holiday season – I certainly enjoyed a nice long (impromptu) hiatus from blogging, but I’m so happy to be back! This year already has some great events and trips lined up. I’m starting off the year with this recipe for Easy Vegan One Pot Asian Pasta because it’s insanely delicious and healthy. The easiest past recipe ever!

Now for the recipe! When I came across this I had to read it three times because I didn’t believe that the pasta cooks right along with everything else. No water needed! Let me say that again . . . you put the uncooked pasta right into the pot with all of the other ingredients! The original recipe is from Sina at Vegan Heaven and you can find it here.

As Sina says in her post, it might seem like you need to add more liquid because we’re so used to cooking pasta in a big pot of water, but it really works out perfectly. I can’t believe how great this recipe is and I’m not sure I’ll be able to cook pasta in water ever again.

This pasta is full of veggies and I can’t imagine even the pickiest of eaters turning down this delicious dish! The flavor is so rich and it couldn’t be any easier to throw together. Not to mention the easiest clean-up ever.

Instructions
  1. Heat oil in a large pot and saute onion for 2-3 minutes.
  2. Add garlic, zucchini, and red bell pepper; cook for 2 more minutes.
  3. Add all remaining ingredients except for cherry tomatoes.
  4. Cook for 13 minutes, then add cherry tomatoes.
  5. Cook for 2 more minutes. Season with salt and pepper to taste. Enjoy!
Recipe Notes

Make sure you don't drain the canned tomatoes as that liquid helps cook the pasta.

Store in the fridge up to one week. To keep longer, freeze for up to 6 weeks.
