Roasted Vegetable Farro Salad

Today, I bring you a super easy and unbelievably delicious recipe. This is one that I plan to make time and time again. It does include cheese so it’s not vegan. There are plenty of recipes that are just as good without cheese, and while I’m sure this one would still be really, really good, I can’t lie. The Muenster cheese puts this recipe over the edge. Β This roasted vegetable farro salad is a must try.

When this salad is warmed up just enough to get the cheese a little melty it. is. heaven.

Roasted and grilled vegetables are hands down my absolute favorite food. I’ll take them either way and please don’t try to get between me and the pan as I eat half of them before they even make it to the table. Thank you for your cooperation in advance.

This recipe is the perfect excuse for basically just eating a bunch of delicious roasted vegetables. The farro does add a nice texture but it’s really just in there so my co-workers don’t stare at me while I eat a bowl of vegetables.

While I do like the chewiness of the farro, you could sub in pretty much any grain. You can also use any mixture of vegetables you like/whatever is in season when you make it. I suppose you could even sub in a different type of cheese but the creaminess of the Muenster is just perfect in my opinion.

This recipe is easy but roasting vegetables does take a little time, so start your vegetables first. Then you can cook the farro, grate the cheese, and chop your herbs while they roast. You will not be sorry you tried this recipe!

Roasted Vegetable Farro Salad

Instructions
  1. Preheat oven to 425F. Prepare cookie sheet with foil (if desired) and cooking spray.
  2. Prepare your veggies. Add to a large bowl and toss with olive oil, salt, and pepper.
  3. Spread evenly on prepared cookie sheet and roast until tender - apx 40-50 minutes.
  4. Add farro to pot and cover with water. Add salt to taste. Bring to a boil, then cover and simmer for 20-25 minutes. Drain any excess water and sit aside.
  5. Mix roasted veggies, farro, grated cheese, fresh parsley, and basil.
