Three Bean Salad

I have another super easy, vegan, high protein, high fiber three bean salad for you this week. This one really keeps me full until dinner too. I’m having trouble fitting in my piece of fruit that I usually have as a snack!

Besides the fact that the recipe calls for cooked rice, this recipe couldn’t be easier. A quick dice of half an onion and one jalapeno are the hardest part of your prep. That said, if onions give you as many issues as they do me, this might be easier said than done.

Enter Modern Family. We’ve been watching all of the seasons from the beginning and I recently saw the Mother’s Day episode where Phil employs special onion goggles to help him out with his chopping. While I don’t have any special onion goggles – are you ready for this? – I discovered that swimming goggles work just as well!

Laugh now, but if they keep all of my fingers intact and get the job done, you better bet I’ll relocate those from the swimsuit drawer to the kitchen drawer! My nose¬†was still irritated but I could see just fine. Finally, a solution to this super annoying issue.

Ok, the original recipe can be found here. Other than doubling the recipe, the only changes I made were to reduce the salt and drastically reduce the sugar. I’m going to assume that the 4 Tbsp of sugar in the original must have been a mistake! With 3 tsp it’s still sweet enough, in fact, unless you just love your food on the sweeter side you could probably omit or reduce it even further to 1 tsp.

Unfortunately, wild rice is pretty much impossible to find in Kuwait. When you can find it it’s extremely expensive. So, I used Basmati for this recipe. Wild Rice is supposed to be the highest quality rice you can buy, so I’m not too surprised it’s all but unavailable here in Kuwait.

Now that we have a crockpot again, I’m on the lookout for dried beans, another thing that seems to be hard to find here! I love using the crockpot to make my own beans in large batches and freezing them. So that’s next on the to-do list. Instructions
  1. Combine all salad ingredients.
  2. Whisk all dressing ingredients in a small bowl until combined.
  3. Pour dressing over salad and toss.
  4. Refrigerate salad for at least one hour for best flavor.
